We used soy milk but you can replace this with a different non-dairy milk such as almond milk if you want this to be soy-free.
This is definitely best served fresh and hot and straight from the frying pan, but if you do have leftovers, they will keep for days in the fridge. Just reheat in the frying pan. If you want a low cal version you can add silken tofu to the firm tofu to get a mix of chunks and wet If you add turmeric to it it gives it the color of real eggs. But this tofu scramble is the perfect texture and taste. We cooked up some potatoes, onions, and vegan sausage then cooked the eggs in a separate pan.
